Tuna Pasta with Dijon Cream
Ingredients
- 8-12 oz pasta (shells/rotini)
- 12 oz can tuna in water
- 1/2 c scallions
- 1 clove jarred garilc
- 1/2 c reduced-fat sour cream
- 1/2 c light mayo
- 4 tsp Dijon mustard
- 1 tsp lemon juice
- 15 small tomatoids
- black pepper to taste
Preparation
Begin cooking pasta according to package directions
Drain tuna put in large bowl and flake with fork. Add scallions, use all the whites and some green. Add garlic, sour cream, mayo and lemon juice. Stir well.
Slice tomatoes in half, set aside
When pasta is cooked, drain and rinse with cold water. Add pasta, tomatoes and black pepper to bowl. Mix then chill.
