Twice Baked Potatoes

cooking oil spray |

already baked Russet potatoes |
3 Tbsp |
butter |
1/3 c |
sour cream |
to taste |
salt and pepper |
1 c |
shredded cheddar cheese |
Preheat the oven to 350, spray a baking sheet with cooking oil spray.
Slice the potatoes in half. Scoop out the centers into a bowl (leaving a 1/4 shell).
Melt the butter in the microwave, about 30 seconds.
Add the butter, sour cream and salt and pepper to the potato pulp. Mash thoroughly.
Place the shells on the baking sheet and fill them with the pulp mixture. Top each with about a tablespoon of cheese.
Bake about 30 minutes then serve immediately.
