Ultimate Mashed Potatoes

INGREDIENTS

  • 5 large russet potatoes
  • 1 clove garlic, peeled
  • 1 lb bacon, diced
  • 1 bundle leeks, cleaned and chopped
  • 2 Tbsp butter
  • 1/4 c white wine
  • 1 c heavy cream
  • 1 c shredded Parmesan

PREPARATION

  1. Chunk potatoes and put them, with garlic clove, in pot with water to cover.
  2. Bring to a boil and cook about 20 minutes or until tender.
  3. Meanwhile, fry bacon till crisp and drain on paper towels.
  4. Wipe out skillet. Saute leeks in butter and wine. Set aside but do not drain.
  5. When potatoes are done, drain them, Mash, adding as much heavy cream as you like. Add bacon, leeks, and Parmesan.
