Veg Out Chowder
Ingredients
- 2 tsp EVOO
- 1 large onion
- 1 bag mushrooms
- 2 c. Southern style hasbrowns (frozen)
- 2 cans chicken broth
- 1 chicken bouillon cube
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- 1 c frozen green peas
- 1 c frozen corn kernels
- 1/2 c sour cream
Preparation
Heat oil in soup pot over medium. Add chopped onion. Cook 3 minutes. Add mushrooms. Cook 1 minute. Add hash browns and turn up heat. Cook until hash browns are defrosted. Add broth, bouillon, Worcestershire and thyme, bring to a boil, then add peas and corn. Cover. Reduce heat. Simmer about 4 minutes.
Remove from heat, add sour cream.
