White Bean Soup

INGREDIENTS

  • 2 Tbsp EVOO
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1/2 lb carrots, sliced thinly
  • 4 ribs celery, sliced
  • 1 lb dry navy beans
  • 1 bay leaf
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 15-20 cranks of pepper
  • 2 tsp salt, or to taste

PREPARATION

  1. Add the olive oil, garlic, onion, celery and carrot to a large slow cooker.
  2. Sort through the beans and remove any debris or stones. Rinse. Add to slow cooker.
  3. Add bay, rosemary, thyme, paprika and pepper.
  4. Add six cups of water and stir to combine.
  5. Cover and cook on low for 8 hours.
  6. Stir and mash the beans slightly. Season with salt to taste.
