White Chili (no beans)

Ingredients

  • 4 cans chicken broth
  • 4 chicken breasts (skinless, boneless), diced
  • 1 cup barley
  • 2 cans whole kernel white corn, drained
  • 2 4oz cans chopped green chiles
  • 1 Tbsp. oregano
  • 1 onion chopped
  • salt and pepper
  • 2 cans garbanzo beans, drained (optional)
  • 1 Tbsp. cumin

Condiments:

  • grated jack cheese
  • limes
  • chopped jalapenos
  • chopped red onion
  • chopped tomatoes
  • sour cream

Directions

Dice chicken. Poach chicken in broth for 1/2 hour (or until chicken cooked through). Add barley, onions, chopped chiles, oregano, cumin, salt and pepper. Cook 1/2 hour or so until barley is tender. Add can of corn, heat through. Serve with condiments.

Good with cornbread. You can squeeze in a whole lime if desired. Make sure soup is bubbling hot before you serve because condiments cool it rapidly.

(If you do want beans, add 2 cans garbanzo beans with other main ingredients.)
