Ziti Mexi-Cali

Ingredients

  • 8-12 oz short pasta
  • 1 can Rotel
  • 1 c frozen corn or 1 can kernels
  • 1 can black beans, UNseasoned
  • 1 bunch scallions
  • 1/4 c shredded cheese

Preparation

Start cooking pasta according to box

Meanwhile, pour rotel into large bowl, cutting up large chunks, add corn, beans (rinsed and drained), and scallions (all white, some green)

Add drained cooked pasta to bowl and toss well.

Sprinkle with cheese.
