Acorn Squash with Rustic Raisin Sauce

INGREDIENTS

  • 1 1/2 pound (large) acorn squash
  • salt
  • 1 onion, chopped
  • 1/3 c golden raisins
  • 2 Tbsp water
  • 1 tsp apple pie spice
  • 2 Tbsp butter
  • 4 tsp honey
  • 1 tsp vanilla
  • 2 Tbsp slivered almonds

PREPARATION

  1. Spray crock with cooking spray.
  2. Cut squash into quarters, seed.
  3. Sprinkle with salt
  4. Combine onion, water, raisins and spice in crock.
  5. Place squash, cut side down, on mixture.
  6. Cover, cook on low for 4-5 hours.
  7. Place squash on platter.
  8. Add remaining ingredients to crock, stir wll,
  9. Spoon mixture over wedges; sprinkle with nuts.
