Antipasto Tortellini Salad
INGREDIENTS
1 envelope Italian dressing mix
1/2 c EVOO
1/4 c red wine vinegar
3 Tbsp water
2 pkg (9-oz) refrigerated tortellini, cooked and rinsed
1 small red onion, finely chopped
8 oz mozzarella, cubed
1 green bell pepper, chopped
2 c cherry tomatoes, halved
1 can (2.25 oz) sliced black olives
PREPARATION
Prepare dressing with EVOO, vinegar, and water.
Combine remaining ingredients in large bowl.
Add dressing, mix lightly.
Refrigerate several hours until chilled.
