Antipasto Tortellini Salad

INGREDIENTS

  • 1 envelope Italian dressing mix
  • 1/2 c EVOO
  • 1/4 c red wine vinegar
  • 3 Tbsp water
  • 2 pkg (9-oz) refrigerated tortellini, cooked and rinsed
  • 1 small red onion, finely chopped
  • 8 oz mozzarella, cubed
  • 1 green bell pepper, chopped
  • 2 c cherry tomatoes, halved
  • 1 can (2.25 oz) sliced black olives

PREPARATION

  1. Prepare dressing with EVOO, vinegar, and water.
  2. Combine remaining ingredients in large bowl.
  3. Add dressing, mix lightly.
  4. Refrigerate several hours until chilled.
