Apple Bacon Cheese Dinner Pies

INGREDIENTS

  • 6 slices bacon, diced
  • 1 package corn muffin mix
  • 2/3 c flour
  • 1 tsp paprika
  • 1 egg, beaten
  • 1/4 c milk
  • 2 Granny Smith apples, sliced thin
  • extra cheddar cheese shreds

PREPARATION

  1. Heat oven to 425
  2. Parchment and spray 2 baking sheets
  3. Cook bacon in skillet until crisp.
  4. Drain on paper towels, reserving drippings
  5. In mixing bowl, combine muffin mix, flour, paprika, egg, and milk to form dough.
  6. Divide into fourths.
  7. Put two portions on each baking sheet and pat into 7" rounds.
  8. Top with a layer of apple slices, leaving a 1" border.
  9. Fold dough roughly over apples.
  10. Brush apple slices and crust with bacon drippings.
  11. Bake for 10 minutes.
  12. Top with cheese and bacon; bake 7 minutes longer, until edges are golden.
