Bacon Jam

INGREDIENTS

  • 1.5 lbs bacon, cut into 1" pieces
  • 2 onions, thinly sliced
  • 3 cloves garlic
  • 1/4 c cider vinegar
  • 1/2 c brown sugar
  • 1/4 c maple syrup
  • 1/4 c boiled cider or apple juice
  • 3/4 c strong tea
  • 2 bay leaves
  • salt and pepper to taste

PREPARATION

  1. Cook bacon in mondo skillet until crisp.
  2. Remove with slotted spoon to crock pot.
  3. Add other ingredients.
  4. Cover, cook on HIGH for 3-4 hours.
  5. Remove bay leaves and process in blender.
  6. If too thin, cook in saucepan over medium until thickened.
  7. Store in refrigerator.
