Baked Asian Chicken Thighs

INGREDIENTS

  • 1/3 c Asian Toasted Sesame dressing
  • 2 Tbsp creamy peanut butter
  • 2 Tbsp soy sauce
  • 1/4 tsp crushed red pepper
  • 8 chicken thighs
  • 1/2 lb baby bok choy, cut crosswise in half
  • 1 yellow onion, sliced
  • 1 red bell pepper, cut in strips
  • 1 Tbsp minced ginger root
  • 1 scallion, sliced
  • 3 Tbsp chopped dry roasted peanuts

PREPARATION

  1. Heat oven to 375
  2. Combine first 4 ingredients and reserve.
  3. Brown chicken on medium (5 minutes).
  4. Place chicken in 13x9 pan.
  5. Add bok choiy, onion and pepper to skillet, cook on medium high three minutes , stirring frequently. Add reserved dressing mixture and stir.
  6. Pour skillet contents over chicken.
  7. Cover with foil and bake for 25 minutes.
  8. Serve over rice with scallion and chopped peanuts for garnish.
