Baked Chicken Thighs with Root Veggies

INGREDIENTS

  • 4 chicken thighs
  • 1/2 lb carrots, chopped
  • 1/2 lb new potatoes, halved
  • 2 Tbsp EVOO
  • kosher salt
  • pepper
  • garlic powder

PREPARATION

  1. Heat oven to 450!
  2. Line rimmed baking sheet with parchment
  3. Arrange thighs and vegetables on baking sheet.
  4. Drizzle with EVOO, toss to coat.
  5. Sprinkle with salt, pepper, and garlic powder--make sure to get both sides of chicken.
  6. Turn chicken skin-side up.
  7. Bake for 40 minutes or until 165
