Balsamic Raspberry Chicken Breasts
INGREDIENTS
1/2 c raspberry preserves
2 Tbsp balsamic vinegar
1 Tbsp raspberry liqueur
4 boneless ckinless breast halves
1 Tbsp dried thyme
1/2 tsp salt
1/4 tsp pepper
2 Tsp EVOO
1/2 c chopped red onion
1/4 c fresh raspberries
PREPARATION
In small bowl, mix preserves, vinegar and liqueur.
Pound breasts to 1/4" thickness between sheets of plastic wrap or in gallon bag.
Heat oil over medium in mondo skillet.
Cook onion until softened, about 3 minutes.
Add chicken and cook 8-10 minutes or until cooked, turning once.
Remove to plate.
Leaving onion in skillet, add preserves mixture and cook, stirring constantly until thickened, 1-2 minutes.
Spoon sauce over breasts.
Top with raspberries.
