Balsamic Raspberry Chicken Breasts

INGREDIENTS

  • 1/2 c raspberry preserves
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp raspberry liqueur
  • 4 boneless ckinless breast halves
  • 1 Tbsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tsp EVOO
  • 1/2 c chopped red onion
  • 1/4 c fresh raspberries

PREPARATION

  1. In small bowl, mix preserves, vinegar and liqueur.
  2. Pound breasts to 1/4" thickness between sheets of plastic wrap or in gallon bag.
  3. Heat oil over medium in mondo skillet.
  4. Cook onion until softened, about 3 minutes.
  5. Add chicken and cook 8-10 minutes or until cooked, turning once.
  6. Remove to plate.
  7. Leaving onion in skillet, add preserves mixture and cook, stirring constantly until thickened, 1-2 minutes.
  8. Spoon sauce over breasts.
  9. Top with raspberries.
