Barbecue Meatballs & Vegetables

INGREDIENTS

  • 1/2 c mayonnaise
  • 1/2 c original style barbecue sauce
  • 1/4 c honey
  • 1 Tbsp chili powder, divided
  • 1 tsp pepper, divided
  • 1 tsp salt, divided
  • 1 lb ground beef
  • 1 medium green bell pepper, cut into chunks
  • 1 medium onion, sliced
  • 1 c sliced mushrooms
  • 1 zucchini, sliced
  • 1 summer squash, sliced
  • 1 8 oz can pineapple chunks, drained

PREPARATION

  1. Combine mayonnaise, barbecue sauce, honey and 2 tsp of the chili powder, 1/2 tsp salt and 1/2 tsp pepper.
  2. Mix meat with remaining chili powder, salt and pepper.
  3. Shape into 12 meatballs and brown on medium high in mondo skillet, drain on paper towels.
  4. In same skillet, cook vegetables for five minutes on medium.
  5. Reduce heat to low. Stir in sauce mixture and meatballs. Simmer on low for 15 minutes, stirring occasionally.
