Big Fat Greek Jar Salad
INGREDIENTS (for each)
- 3 Tbsp Lemon Vinaigrette
- 1/2 zucchini, chopped
- 1/4 can chickpeas
- 1/2 c cooked orzo
- 2 Tbsp Kalamata pieces
- 3 Tbsp chopped red onion
- 1/3 c halved cherry tomatoes (or 1/4 of a package)
- 2-3 Tbsp crumbled Feta
- 1/4 bag spinach
- pine nuts, to taste
PREPARATION
- Layer in order in quart mason jar.
