Boiled Peanut Butter Cookies (don't let the title frighten you; they are insanely addictive)

1/2 C crunchy peanut butter 
3 Cups quick-cooking oatmeal 
1 teaspoon vanilla extract 
1/2 C (1 stick) unsalted butter 
1/2 C milk 
2 Cups granulated sugar 
1/2 teaspoon salt 
1/2 C unsweetened cocoa powder

  1. In large bowl, mix: peanut butter, oatmeal and vanilla
  2. Over moderate heat, heat the butter and milk until butter is melted
  3. Whisk in sugar, salt and cocoa until smooth
  4. Bring to a boil, and cook for 1 1/2 minutes stirring often to prevent scorching.
  5. Stir in the peanut butter-oatmeal mixture, and continue cooking for 1 minute longer, stirring constantly.
  6. Drop by tablespoons onto wax paper or aluminum foil to cool and become firm. (store in sealed container for up to 1 week)

Takes minutes, and perfect. Chocolate and peanut butter. Can't go wrong.
