Bow-Tie Pesto Alfredo

INGREDIENTS

  • 12 oz box bow-tie pasta
  • 2 c frozen peas
  • 1 12-oz package cooked smoked chicken sausage w/apple, mooned
  • 2 tsp EVOO
  • 8 oz sliced fresh mushrooms
  • 1 medium red bell pepper, sliced
  • 2 c bottled alfredo sauce
  • 2 Tbsp basil pesto
  • 2 Tbsp finely shredded Parmesan

PREPARATION

  1. Cook pasta, add frozen peas for last minute.
  2. Drain; return to pot and cover to keep warm.
  3. Heat mondo skillet on medium.
  4. Add sausage, cook about 3 minutes, till heated through and lightly browned.
  5. Remove sausage.
  6. Add oil.
  7. Add mushrooms and pepper, cook for 5 minutes, until tender, stirring occasionally.
  8. Stir in Alfredo sauce, and pesto; heat through.
  9. Add sausage mixture to cooked pasta, stir to coat.
  10. Sprinkle with Parmesan.
