Bowties with Sausage, Tomatoes, and Cream
INGREDIENTS
- 2 Tbsp EVOO
- 1 lb sweet Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 28-oz can crushed tomatoes with puree
- 1/2 c heavy whipping cream
- 16 oz bowtie or other pasta
- 1/2 c chopped fresh basil
- grated parm or romano for serving
PREPARATION
- Heat oil in mondo skillet over medium-high. Add sausage.
- Saute until no longer pink, breaking it up, about 5 minutes.
- Add onion and garlic, saute until onion is tender and sausage is brown, 3 minutes longer.
- Add tomatoes and cream.
- Reduce heat to low and simmer until it thickens, about 3 minutes.
- Season with salt and pepper to taste.
- Meanwhile cook pasta till al dente. Reserve 1 c cooking water and drain.
- Return pasta to same pot.
- Add sausage mixture and toss, cooking over medium-low until sauce coats the pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is too dry.
- Sprinkle with basil.
- Serve with cheese.
