Bowties with Sausage, Tomatoes, and Cream

INGREDIENTS

  • 2 Tbsp EVOO
  • 1 lb sweet Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 28-oz can crushed tomatoes with puree
  • 1/2 c heavy whipping cream
  • 16 oz bowtie or other pasta
  • 1/2 c chopped fresh basil
  • grated parm or romano for serving

PREPARATION

  1. Heat oil in mondo skillet over medium-high. Add sausage.
  2. Saute until no longer pink, breaking it up, about 5 minutes.
  3. Add onion and garlic, saute until onion is tender and sausage is brown, 3 minutes longer.
  4. Add tomatoes and cream.
  5. Reduce heat to low and simmer until it thickens, about 3 minutes.
  6. Season with salt and pepper to taste.
  7. Meanwhile cook pasta till al dente. Reserve 1 c cooking water and drain.
  8. Return pasta to same pot.
  9. Add sausage mixture and toss, cooking over medium-low until sauce coats the pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is too dry.
  10. Sprinkle with basil.
  11. Serve with cheese.
