Braised Pork Chops & Cabbage

INGREDIENTS

  • 1/2 green cabbage, cut in half and sliced
  • 1 onion, chopped
  • 1 tsp jar garlic
  • 4 thick pork chops
  • 3/4 c chicken broth
  • salt and pepper
  • 3 Tbsp tomato paste
  • 1 tsp dried sage
  • 1 pinch nutmeg
  • oil for frying

PREPARATION

  1. Preheat oven to 400.
  2. Heat a little oil in mondo skillet and brown pork chops on both sides. Set aside.
  3. If necessary, add oil and cook onion for 3 minutes, add garlic and cook 10 seconds. Set aside.
  4. If necessary, add oil and cook the cabbage for 2 minutes.
  5. In one of the glass casseroles, layer 1/3 of the cabbage, 1/2 the onion and two pork chops. Repeat then top with cabbage.
  6. Combine broth and tomato paste and pour over.
  7. Bake, covered for one hour.
