Buckeye Bars

INGREDIENTS

  • 1/2 c butter, softened (use the microwave)
  • 3/4 c crunchy peanut butter
  • 22 vanilla wafers, crushed.
  • 2 c powdered sugar
  • 1/2 of 8oz tub frozen whipped topping (do not thaw)
  • 3 oz baking chocolate squares

PREPARATION

  1. Line 8" square pan with foil, leaving "handles'
  2. Beat butter and peanut butter till smooth, gradually add vanilla wafer crumbs, then powdered sugar. Press into bottom of pan.
  3. Microwave whipped topping and chocolate for 1 minute, stir, then microwave for 15-30 seconds until chocolate melts completely. Stir until well blended.
  4. Spread over peanut-butter layer
  5. Chill 2 hours then use foil "handles" to remove from pan. Cut into bars.
