Butternut Squash Au Gratin
INGREDIENTS
- 1 butternut squash
- 4 slices bacon, diced
- 1 small onion, thinly sliced
- 2 Tbsp flour
- 1/4 ts pepper
- 1 c chicken broth
- 1 1/2 c shredded Cheddar, divided
PREPARATION
- Heat oven to 375
- Peel squash; halve lengthwise; remove seeds; slice.
- In red pot, place squash.
- Add water to cover; bring to boil on high.
- Reduce heat; simmer 10 minutes.
- Meanwhile fry bacon until crisp; remove to paper towel.
- Add onion to bacon drippings; cook 5 minutes.
- Add flour and pepper; cook, stirring, 1 minute.
- Add broth; cook, stirring 2-3 minutes or until thickened.
- Remove from heat; stir in 1 c cheese.
- Drain squash; place half in square baking dish..
- Cover with half the sauce.
- Repeat layers; sprinkle with remaining cheese and bacon.
- Bake 25-30 minutes; until cheese is melted.
