Butternut Squash Au Gratin

INGREDIENTS

  • 1 butternut squash
  • 4 slices bacon, diced
  • 1 small onion, thinly sliced
  • 2 Tbsp flour
  • 1/4 ts pepper
  • 1 c chicken broth
  • 1 1/2 c shredded Cheddar, divided

PREPARATION

  1. Heat oven to 375
  2. Peel squash; halve lengthwise; remove seeds; slice.
  3. In red pot, place squash.
  4. Add water to cover; bring to boil on high.
  5. Reduce heat; simmer 10 minutes.
  6. Meanwhile fry bacon until crisp; remove to paper towel.
  7. Add onion to bacon drippings; cook 5 minutes.
  8. Add flour and pepper; cook, stirring, 1 minute.
  9. Add broth; cook, stirring 2-3 minutes or until thickened.
  10. Remove from heat; stir in 1 c cheese.
  11. Drain squash; place half in square baking dish..
  12. Cover with half the sauce.
  13. Repeat layers; sprinkle with remaining cheese and bacon.
  14. Bake 25-30 minutes; until cheese is melted.
