---++ Butternut Squash Au Gratin ---+++ INGREDIENTS * 1 butternut squash * 4 slices bacon, diced * 1 small onion, thinly sliced * 2 Tbsp flour * 1/4 ts pepper * 1 c chicken broth * 1 1/2 c shredded Cheddar, divided ---+++ PREPARATION 1. Heat oven to 375 1. Peel squash; halve lengthwise; remove seeds; slice. 1. In red pot, place squash. 1. Add water to cover; bring to boil on high. 1. Reduce heat; simmer 10 minutes. 1. Meanwhile fry bacon until crisp; remove to paper towel. 1. Add onion to bacon drippings; cook 5 minutes. 1. Add flour and pepper; cook, stirring, 1 minute. 1. Add broth; cook, stirring 2-3 minutes or until thickened. 1. Remove from heat; stir in 1 c cheese. 1. Drain squash; place half in square baking dish.. 1. Cover with half the sauce. 1.
