1 Cinnamon Pie Crust (Or a regular pie crust if you're not feeling up to making pie dough yourself.)
1/2 stick of butter
3/4 c brown sugar, separated into 1/2 and 1/4
2 Tbsp water
2 c whole milk
1 c Heavy cream
9 egg yolks
3 Tbsp corn starch
2 tsp cinnamon
Preparation
Preheat oven to 350F(400, because our oven sucks.)
Brown butter in small saucepot, and remove from heat, and set aside to cool
In pot combine milk and cream over medium, and cook until steaming. Remove from heat, transfer to something with a spout for easy pouring.
In the formerly butter browning pot, combine the 1/2c of brown sugar and water over medium until bubbles are large and slow(~240F). Add butter back, and whisk to combine.
Temper milk into caramel, then mix until all of the milk has been added, and caramel is fully dissolved. Remove from heat
In large bowl mix remaining brown sugar, egg yolks, corn starch, and cinnamon until combined.
Temper egg mixture into the milk, and return to medium heat.
Gently stir mixture with a spoonula to cook the eggs, making sure to scrape the bottom of the pot. When the mixture coats the back of the spoonula, remove from heat and pour into pie shell in 9" pan.
Bake for 25 minutes, and leave it inside the oven for another 20.
Let cool for a few hours, and enjoy the smells. Serve with whipped cream.
