Combine first three ingredients in a large bowl, and cut butter into the mixture, saving wrapper to grease pie pan later.
Add egg yolk to bowl, and mix together, avoiding clumps.
Add the cinnamon and about 1T of cold water, mix adding more water in small increments until a smooth dough is formed. Tightly wrap, and chill for half hour. Meanwhile grease pie pan with inside of butter wrapper.
Turn out firm dough onto lightly flour surface, and roll dough out into a circle slightly larger than pie pan.
Transfer dough to pan carefully, and remove excess. Press the edges if desired.
Set oven to 400F(450, oven sucks), and fridge crust while it preheats. After about 20 minutes, fill the center with something heavy, and bake for 10 minutes.
Remove from oven, cool five minutes and lightly coat with egg wash. Return to oven for a final five minutes of cooking, and let cool completely.
