Carrot and Parsnip Mash

INGREDIENTS

  • 16 oz baby carrots
  • 1 lb parsnips, chopped
  • salt and pepper to taste
  • 2 Tbsp butter

PREPARATION

  1. Put carrots and parsnips in steamer basket over simmering water.
  2. Cook until tender, about 20 minutes. Remove and place in serving bowl.
  3. Mash and season with salt and pepper. Add butter.
