Celebration Cake

INGREDIENTS

Cake

  • 1 box devil's food cake mix
  • 1 box 4-serving size) chocolate instant pudding
  • 4 eggs
  • 1/3 c vegetable oil
  • 1 c liqueur
  • 1 c sour cream

Frosting

  • 1 c butter, softened
  • 4 oz cream cheese
  • 3 c powdered sugar
  • 1/4 c liqueur
  • 1 tsp vanilla

Glaze

  • 4 oz bittersweet chocolate, chopped
  • 1/2 c heavy whipping cream
  • 1/4 c light corn syrup
  • 2 tsp vanilla
  • 1/3 c toasted nuts

PREPARATION

  1. Heat oven to 375
  2. Spray 2 9" layer pans with cooking spray
  3. In large bowl, beat all cake ingredients with mixer on medium 5 minutes.
  4. Pour batter into pans.
  5. Bake 35 - 45 minutes. or until toothpick comes out clean.
  6. Cool ten minutes in pan, then remove from pan to cooling racks, cool completely.
  7. In large bowl, beat butter and cream cheese on medium until light and fluffy.
  8. Reduce speed to low; add powdered sugar, 1 cup at a time.
  9. Add 1/4 c liqueur and 1 tsp vanilla.
  10. Beat until spreadable.
  11. Place 1 layer on plate.
  12. Spread with 1/3 frosting.
  13. Top with second layer. Frost with thin layer to seal in crumbs.
  14. Refrigerate 30 minutes--top with remaining frosting.
  15. Place chopped chocolate in small bowl.
  16. In small saucepan, heat whipping cream over medium until small bubbles form around edged.
  17. Pour over chocolate in bowl; let stand one minute.
  18. Stir with whisk until chocolate is melted.
  19. Add 2 tsp vanilla and corn syrup. Stir until smooth.
  20. Let stand 10 minutes to thicken.
  21. Pour glaze over cake, letting some run down sides; sprinkle nuts around edge of cake.
  22. Store in refrigerator.
