Cheeseburger Lasagna

INGREDIENTS

  • 1.5 lbs ground beef
  • 3 Tbsp instant minced onion
  • 1 can (15-oz) tomato sauce
  • 1.5 c water
  • 1/2 c ketchup
  • 1 Tbsp yellow mustard
  • 1 egg
  • 1 15-oz container ricotta
  • 2 c shredded cheddar-American blend
  • 12 oven-ready lasagna noodles
  • 1 c shredded cheddar
  • 1 c shredded lettuce
  • 1 tomato, sliced (optional)
  • dill pickle slices (optional)

PREPARATION

  1. Spray 13" x 9" pan with cooking spray
  2. In mondo skillet, cook beef and onion till beef is brown; drain.
  3. Stir in tomato sauce, water, ketchup, and mustard.
  4. Simmer 5 minutes, stirring occasionally.
  5. Meanwhile, in medium bowl, beat egg with fork or whisk.
  6. Stir in the ricotta and cheese blend.
  7. Put 1 c meat mixture in bottom of prepared pan.
  8. Top with 4 noodles; spread with 1/2 the cheese mixture, then 1.5 c beef mixture.
  9. Repeat layers.
  10. Top with 4 noodles, remaining beef mixture and cheddar cheese.
  11. Cover with foil. Refrigerate 8 hours or overnight.
  12. Heat oven to 375.
  13. Bake lasagna, covered, 45 minutes; uncover and bake 25-35 minutes longer or until bubbly.
  14. Remove from oven; cover with foil and let stand 5-10 minutes before cutting.
  15. Just before serving, top with lettuce, tomato, and pickle, if using.
