Cheesy Bacon No-Boil Pasta Bake

INGREDIENTS

  • 1 lb spaghetti, broken in half
  • 1 tsp salt
  • 1 chicken breast, cut into bite-sized pieces
  • 1 carton chicken stock
  • 16 oz cream cheese, cubed, softened
  • 12 slices bacon, diced, cooked
  • 1 c parmesan
  • 1 c Italian panko
  • 4 Tbsp butter, melted

PREPARATION

  1. Heat oven to 425
  2. Spray 13" x 9" pan with cooking spray.
  3. Spread spaghetti in bottom of pan.
  4. Sprinkle salt over chicken.
  5. In skillet, cook chicken over medium-high, 4-5 minutes until browned.
  6. Add stock and cream cheese; reduce heat to medium.
  7. Heat to simmer.
  8. Stir constantly to break up cream cheese. until combined. Mixture may appear grainy but will melt during baking.
  9. Pour chicken mixture over spaghetti; stir.
  10. Cover with foil.
  11. Bake 28-30 minutes; stir.
  12. Meanwhile, in medium bowl, mix bacon, parmesan, panko and butter.
  13. Sprinkle over pasta mixture.
  14. Bake 8-10 minutes longer until bread crumbs begin to brown and cheese is melted.
