---++ Cheesy Crockpot Tortellini
---+++ INGREDIENTS
   * 1 Tbsp EVOO
   * 1 lb ground beef
   * 1 onion, diced
   * 2 cloves garlic, minced
   * 1 28oz can crushed tomatoes
   * 1 can mild Ro-Tel
   * 1/2 tsp dried oregano
   * 1/2 tsp dried basil
   * salt and pepper to taste
   * 1 9 oz package tortellini
   * 1 c shredded mozzarella
   * 1/2 c shredded cheddar
   * 2 tsp dried parsley flakes
---+++ PREPARATION
   1. Heat EVOO in mondo skillet over medium-high.
   1. Cook beef, onions and garlic until beef is brown; drain.
   1. Place beef mixture, crushed tomatoes, Ro-Tel, oregano, and basil in crock.
   1. Season with salt and pepper.
   1. Stir until well-combined.
   1. Cover and cook on LOW for 7-8 hours.
   1. Uncover and stir in tortellini;  top with cheeses and sprinkle with parsley flakes.
   1. Cover and cook 30 minutes on LOW or until tender.
