Chicken Marsala
INGREDIENTS
1 Tbsp jar garlic
1 Tbsp EVOO
4 chicken breast halves
1 tsp salt
1/2 tsp pepper
2 jars sliced mushrooms
1 c sweet marsala wine
1/2 c water
1/4 c cornstarch
PREPARATION
Spray 4-qt crock with cooking spray.
Place garlic and oil in bottom of cooker.
Sprinkle chicken with salt and pepper. Place on garlic in cooker.
Place mushrooms over chicken, pour wine over all.
cover, cook on LOW 5-6 hours.
Remove chicken from cooker and tent with foil to keep warm.
In small liquid measure, whisk cornstarch and water until lump-free.
Stir into liquid in crock. Set heat to HIGH, cover and cook 10 minutes.
Return chicken to cooker, cover and cook for 5-7 minutes, until hot.
To serve, spoon mushroom mixture over chicken breasts.
