Chunky Beef, Cabbage and Tomato Soup

INGREDIENTS

  • 1 lb lean ground beef
  • 1.5 tsp kosher salt
  • 1/2 c diced onion
  • 1/2 c diced celery
  • 1/2 c diced carrot
  • 28 oz can diced tomatoes
  • 5 c chopped green cabbage
  • 1 box beef stock
  • 2 bay leaves

PREPARATION

  1. In Dutch oven, brown ground beef with salt, breaking up into small pieces.
  2. Add onion, celery, and carrots and saute for 4-5 minutes.
  3. Add tomatoes, cabbage, stock, and bay leaves.
  4. Bring to a boil, then cover, and simmer on low for 40 minutes.
