Chunky Beef, Cabbage and Tomato Soup
INGREDIENTS
1 lb lean ground beef
1.5 tsp kosher salt
1/2 c diced onion
1/2 c diced celery
1/2 c diced carrot
28 oz can diced tomatoes
5 c chopped green cabbage
1 box beef stock
2 bay leaves
PREPARATION
In Dutch oven, brown ground beef with salt, breaking up into small pieces.
Add onion, celery, and carrots and saute for 4-5 minutes.
Add tomatoes, cabbage, stock, and bay leaves.
Bring to a boil, then cover, and simmer on low for 40 minutes.
