Cider Pork Skillet

INGREDIENTS

  • 1 Tbsp butter
  • 3 Tbsp flour
  • 1/2 c milk
  • 1/2 c chicken broth
  • 2 ribs celery, chopped
  • 1/2 c cider
  • 2 Tbsp dijon mustard
  • 1 Tbsp honey
  • 1 Tbsp EVOO
  • 4 pork chops

PREPARATION

  1. Melt butter in saucepan over low. Stir in flour and cook 1 minute.
  2. Add milk broth and celery.
  3. Bring to gentle boil and stir till thickened, about 3 minutes.
  4. Remove from heat; add cider, mustard, and honey.
  5. Season with salt and pepper; set aside.
  6. Heat oil in large skillet.
  7. Add pork and brown on both sides.
  8. Add sauce to skillet; cover and cook on LOW for 5-10 minutes.
