Corn & Zucchini Flan
INGREDIENTS
4 good eggs
1/4 c half-and-half
4 oz cream cheese
1/2 Tbsp cornstarch
1/2 tsp salt
1/4 tsp black pepper
1 medium zucchini, grated and squeezed
1 1/2 c corn kernels
2 Tbsp fresh basil, chopped or 1 Tbsp dried.
PREPARATION
Preheat oven to 400
Prepare six ramekins by spraying with cooking spray.
In large mixing bowl, combine eggs, half-and-half, cheese, cornstarch, salt, and pepper.
Beat with an electric mixer on medium for 1 minute or until thoroughly blended.
Stir in zucchini, corn, and basil.
Spoon mixture into ramekins.
Place ramekins on baking sheet and bake for 30-35 minutes or until puffed slightly golden brown.
Cool 5 minutes.
