Cowboy Meatloaf & Potato Casserole

INGREDIENTS

• 1 lb ground beef
• 3/4 c chopped onion
• 1/3 c bread crumbs
• 1/4 c barbecue sauce
• 1 egg, beaten
• 2 tsp chili powder
• 1 package steam & mash potatoes
• 1 Tbsp butter
• 1 can evaporated milk
• 1 tsp parsley flakes
• 1 tsp garlic powder
• 1/2 c bacon bits
• 1/4 c french fried onions
• 2/3 c Mexican shredded cheese

PREPARATION

1. Heat oven to 400. Spray 9" square baking dish with cooking spray.
2. Mix meat, onion, bread crumbs, barbecue sauce, egg, and chili powder.
3. Press into bottom of prepared dish.
4. Bake 20-25 minutes or until 160.
5. Meanwhile microwave potatoes according to package directions.
6. Place in medium bowl, Add butter, milk, parsley and garlic powder, mix well.
7. Gently stir in bacon bits and French fried onions.
8. Heat broiler.
9. Spread potato mixture over beef mixture. Top with cheese.
10. Broil 4" from heat 3-5 minutes or until cheese is melted.
