Creamy Pesto Fish

INGREDIENTS

  • 4 frozen haddock, cod or halibut (about 1 lb total) -- do not thaw
  • 1/4 c mayonnaise
  • 2 Tbsp pesto
  • 1 tomato, chopped

PREPARATION

  1. Heat oven to 450
  2. Place fish in 13" x 9" pan.
  3. Mix mayonnaise and pesto, spread onto fish
  4. Top with tomato
  5. Bake 15-20 minutes, until fish flakes easily
