Crock Pot Loaded Mashed Potatoes
INGREDIENTS
- 1/2 lb bacon, diced
- 2 garlic cloves, minced
- 3 lbs Yukon gold potatoes, peeled and diced
- 1 8-oz pkg cream cheese, room temperature
- 1 c sour cream
- 1/2 c (1 stick) butter, cut into chunks, at room temperature
- 1/2 c chicken stock
- 1/4 c whipping cream
- 3 c shredded sharp cheddar
- 4 scallions, thinly sliced
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
PREPARATION
- Brown the bacon in a Dutch oven over medium-high, about 5 minutes.
- Add garlic, reduce heat to medium, and cook 1 minute.
- Place mixture into the slow cooker.
- Add remaining ingredients. Stir to combine.
- Cover and cook on LOW for 3 hours.
- Let rest 10 minutes.
- Stir and season with additional salt and pepper if needed.
