Crock Pot Loaded Mashed Potatoes

INGREDIENTS

  • 1/2 lb bacon, diced
  • 2 garlic cloves, minced
  • 3 lbs Yukon gold potatoes, peeled and diced
  • 1 8-oz pkg cream cheese, room temperature
  • 1 c sour cream
  • 1/2 c (1 stick) butter, cut into chunks, at room temperature
  • 1/2 c chicken stock
  • 1/4 c whipping cream
  • 3 c shredded sharp cheddar
  • 4 scallions, thinly sliced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

PREPARATION

  1. Brown the bacon in a Dutch oven over medium-high, about 5 minutes.
  2. Add garlic, reduce heat to medium, and cook 1 minute.
  3. Place mixture into the slow cooker.
  4. Add remaining ingredients. Stir to combine.
  5. Cover and cook on LOW for 3 hours.
  6. Let rest 10 minutes.
  7. Stir and season with additional salt and pepper if needed.
