Crock Pot Sweet Potatoes
INGREDIENTS
Base
- 2 29-oz cans sweet potatoes
- 1/4 c softened butter
- 2 Tbsp white sugar
- pinch of salt
- 2 1/2 Tbsp brown sugar
- 1 Tbsp orange juice
- 2 large eggs
- 2 tsp vanilla
- 1/2 c milk
Topping
- 3/4 c chopped pecans
- 2/3 c brown sugar
- 1/4 c all-purpose flour
- 1 tsp vanilla
- 1/4 c melted butter
PREPARATION
- USE A LINER
- Drain sweet potatoes. Place in large bowl with butter, sugars, salt and orange juice.
- In a small bowl, beat the eggs with a fork.
- Pour eggs, milk and vanilla into big bowl.
- Beat together until smooth.
- Put mixture in lined crock, smooth the top.
- In a small bowl, combine topping ingredients. Spread evenly on top of sweet potatoes.
- Cover and cook on high for 3 hours.
