Crockpot 5-Cheese Spinach Dip
INGREDIENTS
1 12-oz jar roasted red peppers
1 6 1/2-oz jar marinated, quartered artichoke hearts
1 box frozen chopped spinach, thawed and squeezed
8 oz Mozzarella Fresca, cubed
1 1/2 c (6 oz) shredded Asiago
6 oz cream cheese, softened and cubed
1 c (4 oz) crumbled Feta
1/3 c shredded provalone
1/3 c minced fresh basll
1/4 c finely chopped red onion
2 Tbsp mayonnaise
2 cloves garlic, minced
PREPARATION
Drain peppers, reserving 1 Tbsp liquid. Chop.
Drain artichokes, reserving 2 Tbsp liquid. Chop.
Spray 3-qr slow cooker with cooking spray.
Combine spinach, cheeses, basil, onion, mayonnaise, garlic artichoke hearts, and peppers. Stir in reserved liquids.
Cook on high 2 hours.
Stir. Cook 30-60 minutes longer.
Serve with crackers.
