Crockpot 5-Cheese Spinach Dip

INGREDIENTS

  • 1 12-oz jar roasted red peppers
  • 1 6 1/2-oz jar marinated, quartered artichoke hearts
  • 1 box frozen chopped spinach, thawed and squeezed
  • 8 oz Mozzarella Fresca, cubed
  • 1 1/2 c (6 oz) shredded Asiago
  • 6 oz cream cheese, softened and cubed
  • 1 c (4 oz) crumbled Feta
  • 1/3 c shredded provalone
  • 1/3 c minced fresh basll
  • 1/4 c finely chopped red onion
  • 2 Tbsp mayonnaise
  • 2 cloves garlic, minced

PREPARATION

  1. Drain peppers, reserving 1 Tbsp liquid. Chop.
  2. Drain artichokes, reserving 2 Tbsp liquid. Chop.
  3. Spray 3-qr slow cooker with cooking spray.
  4. Combine spinach, cheeses, basil, onion, mayonnaise, garlic artichoke hearts, and peppers. Stir in reserved liquids.
  5. Cook on high 2 hours.
  6. Stir. Cook 30-60 minutes longer.
  7. Serve with crackers.
