Crockpot Sourdough Peasant Bread

INGREDIENTS

  • 1 1/4 c warm (105) water
  • 1 Tbsp yeast
  • 1 tsp sugar
  • 1/2 c plain yogurt
  • 1/4 c warm milk
  • 2 1/2 tsp salt
  • 3 3/4 c all-purpose flour
  • 1/4 c whole wheat flour
  • cooking spray
  • 1 Tbsp yellow cornmeal

PREPARATION

  1. In an extra-large bowl, combine water, yeast and sugar; let stand about 10 minutes or until foamy.
  2. Stir in yogurt, milk, and salt.
  3. In a medium bowl, stir together flours till combined.
  4. Add 2 1/2 c of the flour mixture to yeast mixture.
  5. Cover with plastic wrap and let stand at room temperature for 2 hours.
  6. stir 1 1/4 c of remaining flour mixture into dough. Sprinkle a work surface with the remaining flour mixture.
  7. Knead dough for 2 1/2 to 3 minutes or until flour is incorporated (dough will be sticky). Cover dough on work surface and let stand 30 minutes.
  8. Lightly coat 6qt slow cooker with cooking spray.Line the bottoms with parchment paper.
  9. Coat parchment with cooking spray and sprinkle with cornmeal.
  10. Dust top of dough lightly with additional flour and use large spatula to loosen from work surface.
  11. Place dough in slow cooker, carefully so as not to disturb air bubbles.
  12. Cover and cook on high for 2:15 to 2:30. or until temperature near center is 200.
  13. Preheat broiler.
  14. Remove bread from crockpot and peel off parchment. Place on ungreased baking sheet Broil 2-3 minutes.
  15. Cool on wire rack before slicing.
