Drunken Irish Stew
INGREDIENTS
- 1.25 lbs stew meat, cut into small pieces
- 1 Tbsp soy sauce
- 2 Tbsp flour
- 1 Tbsp EVOO
- 2 Tbsp tomato paste
- 1/4 c red wine
- 2 bottles Guinness
- 4 cloves Real Garlic, chopped
- 2 tsps Better than Boullion
- 3 carrots, peeled and chopped
- 2 large potatoes, peeled and chopped
- 1 large onion, chopped
- 2 bay leaves
- black pepper
- 1 c frozen peas
PREPARATION
- Put meat in bowl and toss with soy sauce.
- Add flour and toss to coat.
- Heat EVOO in skillet on medium
- Add floured meat; cook, stirring frequently, till browned.
- In crock, stir together tomato paste, Guinness, garlic, and boullion until well mixed.
- Add meat, carrots, potato, onion, bay leaves, and lots of fresh-ground pepper.
- Cover and cook on LOW 8 hours.
- Stir in the peas, heat 15 minutes or until hot.
