Drunken Irish Stew

INGREDIENTS

  • 1.25 lbs stew meat, cut into small pieces
  • 1 Tbsp soy sauce
  • 2 Tbsp flour
  • 1 Tbsp EVOO
  • 2 Tbsp tomato paste
  • 1/4 c red wine
  • 2 bottles Guinness
  • 4 cloves Real Garlic, chopped
  • 2 tsps Better than Boullion
  • 3 carrots, peeled and chopped
  • 2 large potatoes, peeled and chopped
  • 1 large onion, chopped
  • 2 bay leaves
  • black pepper
  • 1 c frozen peas

PREPARATION

  1. Put meat in bowl and toss with soy sauce.
  2. Add flour and toss to coat.
  3. Heat EVOO in skillet on medium
  4. Add floured meat; cook, stirring frequently, till browned.
  5. In crock, stir together tomato paste, Guinness, garlic, and boullion until well mixed.
  6. Add meat, carrots, potato, onion, bay leaves, and lots of fresh-ground pepper.
  7. Cover and cook on LOW 8 hours.
  8. Stir in the peas, heat 15 minutes or until hot.
