Earl Grey Ice Cream

INGREDIENTS

  • 3 c milk
  • 1 vanilla bean
  • 4 Earl Grey tea bags
  • 3/4 c sugar
  • 12 egg yolks
  • another 3/4 c sugar
  • 2 1/2 c cream

PREPARATION

  1. Split the vanilla bean and scrape the seeds into a heavy pot.
  2. Put the milk and 3/4 c sugar in the pot and bring to a scald.
  3. Add tea bags and steep 20 minutes.
  4. Using a mixer, combine yolks and the other 3/4 c sugar and mix at medium until yolks are stiffened and are pale yellow.
  5. On low, gradually add about 1 c of the hot milk mixture.
  6. Add yolk mixture to the pot and cook over medium low until just thickened and coats the back of a wooden spoon.
  7. Strain through a fine strainer and put the teabags back in. Chill overnight.
  8. Stir in cream and freeze in ice cream maker.
