Earl Grey Ice Cream
INGREDIENTS
3 c milk
1 vanilla bean
4 Earl Grey tea bags
3/4 c sugar
12 egg yolks
another 3/4 c sugar
2 1/2 c cream
PREPARATION
Split the vanilla bean and scrape the seeds into a heavy pot.
Put the milk and 3/4 c sugar in the pot and bring to a scald.
Add tea bags and steep 20 minutes.
Using a mixer, combine yolks and the other 3/4 c sugar and mix at medium until yolks are stiffened and are pale yellow.
On low, gradually add about 1 c of the hot milk mixture.
Add yolk mixture to the pot and cook over medium low until just thickened and coats the back of a wooden spoon.
Strain through a fine strainer and put the teabags back in. Chill overnight.
Stir in cream and freeze in ice cream maker.
