Easy Chinese Chicken

INGREDIENTS

  • ¼ c soy sauce
  • ¼ c water
  • 1½ pounds chicken (breast or thigh) cut into 2" cubes
  • 1 c flour
  • 4 Tbsp coconut oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger
  • ½ tsp crushed red pepper flakes
  • 2 Tbsp rice vinegar
  • 2 Tbsp honey
  • ¼ c soy sauce
  • ½ c water

PREPARATION

  1. In a shallow dish, combine ¼ c soy sauce and ¼ c water. Add chicken and marinate for at least 15 minutes at room temperature or a few hours in the fridge.
  2. Place the flour on a plate. Remove chicken from marinade and roll in flour to coat all sides.
  3. In large skillet, melt coconut oil over medium heat. Add chicken and cook till golden brown all over and cooked through, about 6-8 minutes. Remove to a plate, leaving flavorful bits in pan.
  4. In the same pan, over medium, cook garlic, ginger, and pepper flakes for 30-60 seconds, then whisk in vinegar, honey, ¼ cup soy sauce and ½ cup water and bring to a boil. Cook, scraping up browned bits off the bottom, until the liquid begins to thicken, 2-3 minutes. Add chicken and stir to cost with sauce. Serve.
