Easy Chinese Chicken
INGREDIENTS
- ¼ c soy sauce
- ¼ c water
- 1½ pounds chicken (breast or thigh) cut into 2" cubes
- 1 c flour
- 4 Tbsp coconut oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger
- ½ tsp crushed red pepper flakes
- 2 Tbsp rice vinegar
- 2 Tbsp honey
- ¼ c soy sauce
- ½ c water
PREPARATION
- In a shallow dish, combine ¼ c soy sauce and ¼ c water. Add chicken and marinate for at least 15 minutes at room temperature or a few hours in the fridge.
- Place the flour on a plate. Remove chicken from marinade and roll in flour to coat all sides.
- In large skillet, melt coconut oil over medium heat. Add chicken and cook till golden brown all over and cooked through, about 6-8 minutes. Remove to a plate, leaving flavorful bits in pan.
- In the same pan, over medium, cook garlic, ginger, and pepper flakes for 30-60 seconds, then whisk in vinegar, honey, ¼ cup soy sauce and ½ cup water and bring to a boil. Cook, scraping up browned bits off the bottom, until the liquid begins to thicken, 2-3 minutes. Add chicken and stir to cost with sauce. Serve.
