Fish Bake with Tomato Bacon Avocado Salsa
INGREDIENTS
Fish
- 1 c baking mix
- 1 tsp salt
- 1 5 tsp smoked paprika
- 1/8 tsp chipotle powder
- 1/2 tsp lemon pepper
- 1/2 c evaporated milk
- 4 tilapia fillets
- cooking spray
Salsa
- 4 slices bacon, diced, cooked, drained
- 2 avocados, chopped
- 2 large tomatoes, seeded, diced
- 1/3 c chopped red onion
- 1/4 c chopped parsley
- 2 Tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp pepper
PREPARATION
- Heat oven to 400
- Spray baking sheet with cooking spray
- In shallow dish, mix baking mix, salt, paprika, chipotle powder, and lemon pepper.
- Put evaporated milk in another shallow dish
- Dip fillets in milk, then coat with seasoned mix.
- Place on baking dish and spray top of fish with cooking spray to moisten
- Bake, uncovered, 15-20 minutes.
- In large bowl, mix salsa ingredients. Let stand 15 minutes.
- Stir salsa and adjust seasoning.
- Top baked fish with salsa.
