---++ Fish Bake with Tomato Bacon Avocado Salsa
---+++ INGREDIENTS
---++++ Fish
   * 1 c baking mix
   * 1 tsp salt
   * 1 5 tsp smoked paprika
   * 1/8 tsp chipotle powder
   * 1/2 tsp lemon pepper
   * 1/2 c evaporated milk
   * 4 tilapia fillets
   * cooking spray
---++++ Salsa
   * 4 slices bacon, diced, cooked, drained
   * 2 avocados, chopped
   * 2 large tomatoes, seeded, diced
   * 1/3 c chopped red onion
   * 1/4 c chopped parsley
   * 2 Tbsp lime juice
   * 1/2 tsp salt
   * 1/4 tsp pepper
---+++ PREPARATION
   1 Heat oven to 400
   1 Spray baking sheet with cooking spray
   1 In shallow dish, mix baking mix, salt, paprika, chipotle powder, and lemon pepper.
   1 Put evaporated milk in another shallow dish
   1 Dip fillets in milk, then coat with seasoned mix.
   1 Place on baking dish and spray top of fish with cooking spray to moisten
   1 Bake, uncovered, 15-20 minutes.
   1 In large bowl, mix salsa ingredients. Let stand 15 minutes.
   1 Stir salsa and adjust seasoning.
   1 Top baked fish with salsa.
