Fresh Strawberry Cake
INGREDIENTS
- 1 package (18.25 oz) white cake mix
- 1.5 c mashed strawberries & juice (3 heaping cups rinsed and dried)
- 1/2 c vegetable oil
- 1/4 c milk
- 1 tsp vanilla
- 4 large eggs
- Strawberry Cream Cheese Frosting
PREPARATION
- Preheat oven to 375. Place rack in center.
- Grease and flour 13" x 9" or 3 9" layer pans.
- Place cake mix, mashed berries, oil, milk, vanilla, and eggs in large mixing bowl.
- Beat with electric mixer on low until ingredients are incorporated, 30 seconds.
- Scrape down sides of bowl.
- Beat on medium for 1.5 minutes, the strawberries should be well-blended into the batter.
- Pour batter into prepared pan(s), smoothing the tops with a spoonula.
- Place pan(s) in oven. Bake until the top springs back when lightly touched, 20-25 for layers (longer for 13" x 9").
- Let cool completely before frosting.
