Fresh Strawberry Cake

INGREDIENTS

  • 1 package (18.25 oz) white cake mix
  • 1.5 c mashed strawberries & juice (3 heaping cups rinsed and dried)
  • 1/2 c vegetable oil
  • 1/4 c milk
  • 1 tsp vanilla
  • 4 large eggs
  • Strawberry Cream Cheese Frosting

PREPARATION

  1. Preheat oven to 375. Place rack in center.
  2. Grease and flour 13" x 9" or 3 9" layer pans.
  3. Place cake mix, mashed berries, oil, milk, vanilla, and eggs in large mixing bowl.
  4. Beat with electric mixer on low until ingredients are incorporated, 30 seconds.
  5. Scrape down sides of bowl.
  6. Beat on medium for 1.5 minutes, the strawberries should be well-blended into the batter.
  7. Pour batter into prepared pan(s), smoothing the tops with a spoonula.
  8. Place pan(s) in oven. Bake until the top springs back when lightly touched, 20-25 for layers (longer for 13" x 9").
  9. Let cool completely before frosting.
