Gazpacho Verde

INGREDIENTS

  • 3 c fresh baby spinach
  • 2 ripe avocados
  • 1 English cucumber
  • 3 stalks celery, cut into 1" pieces
  • 1 c ice cubes
  • 1 c cold water
  • 1/2 c green salsa
  • 1/4 c lime juice
  • salt & pepper to taste

PREPARATION

  1. In a food processor, combine everything.
  2. Cover and process until smooth.
  3. Chill 5- 10 minutes for flavors to combine.
