Greek Meatloaf

INGREDIENTS

  • 1 Tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 eggs, divided
  • 2 lbs ground pork
  • 1 1/3 c quick-cooking oats
  • 1/3 c Greek dressing
  • 3 Tbsp chopped parsley
  • 1 tsp oregano
  • 1/2 tsp pepper
  • 2 c tightly-packed spinach, chopped
  • 1 pkg (4 oz) crumbled feta
  • 1/2 c shredded Mozzarella

PREPARATION

  1. Heat oven to 375; spray 13" x 9" pan with cooking spray.
  2. Heat oil in medium skillet on medium heat.
  3. Add onions, cook 5-6 minutes
  4. Add garlic, cook 1 minute longer; remove from heat.
  5. Beat 1 egg in large bowl.
  6. Add meat, oats, dressing, parsley, oregano, pepper and onion mixture.
  7. Mix until just blended.
  8. Shape 2/3 into shallow loaf in 13" x 9" pan.
  9. Make an indentation in the center by pressing down.
  10. Beat remaining egg in medium bowl.
  11. Add spinach and feta; mix well.
  12. Spoon into indentation in meat.
  13. Cover with remaining meat and press edges together to seal.
  14. Top with Mozzarella.
  15. Cover with foil and bake for 1 hour or until 140. Uncover and bake till 160.
  16. Let stand 10 minutes before serving.
