Harvest Pasta Bake
INGREDIENTS
2 lb butternut squash, peeled and cubed (or 1.5 lbs precut)
1 onion, stringed
pinch crushed red pepper flakes
2 Tbsp EVOO
12 oz penne rigate
4 oz cream cheese, cubed
1/4 c milk
2 c shredded casserole cheese
1/4 c crushed croutons
PREPARATION
Heat oven to 425
Combine squash, onion, EVOO, and pepper flakes in 13" x 9" pan.
Bake 30-40 minutes or until squash is tender.
Meanwhile, cook pasta; drain.
Add cream cheese and milk to pasta; stir until cheese is melted.
Add pasta mixture and 1 c cheese to squash mixture in pan.
Mix lightly.
Top with remaining cheese and crouton crumbs.
Bake 20 minutes.
