Harvest Pasta Bake

INGREDIENTS

  • 2 lb butternut squash, peeled and cubed (or 1.5 lbs precut)
  • 1 onion, stringed
  • pinch crushed red pepper flakes
  • 2 Tbsp EVOO
  • 12 oz penne rigate
  • 4 oz cream cheese, cubed
  • 1/4 c milk
  • 2 c shredded casserole cheese
  • 1/4 c crushed croutons

PREPARATION

  1. Heat oven to 425
  2. Combine squash, onion, EVOO, and pepper flakes in 13" x 9" pan.
  3. Bake 30-40 minutes or until squash is tender.
  4. Meanwhile, cook pasta; drain.
  5. Add cream cheese and milk to pasta; stir until cheese is melted.
  6. Add pasta mixture and 1 c cheese to squash mixture in pan.
  7. Mix lightly.
  8. Top with remaining cheese and crouton crumbs.
  9. Bake 20 minutes.
