Harvest Pasta Bake
INGREDIENTS
- 2 lb butternut squash, peeled and cubed (or 1.5 lbs precut)
- 1 onion, stringed
- pinch crushed red pepper flakes
- 2 Tbsp EVOO
- 12 oz penne rigate
- 4 oz cream cheese, cubed
- 1/4 c milk
- 2 c shredded casserole cheese
- 1/4 c crushed croutons
PREPARATION
- Heat oven to 425
- Combine squash, onion, EVOO, and pepper flakes in 13" x 9" pan.
- Bake 30-40 minutes or until squash is tender.
- Meanwhile, cook pasta; drain.
- Add cream cheese and milk to pasta; stir until cheese is melted.
- Add pasta mixture and 1 c cheese to squash mixture in pan.
- Mix lightly.
- Top with remaining cheese and crouton crumbs.
- Bake 20 minutes.
