---++ Harvest Pasta Bake ---+++ INGREDIENTS * 2 lb butternut squash, peeled and cubed (or 1.5 lbs precut) * 1 onion, stringed * pinch crushed red pepper flakes * 2 Tbsp EVOO * 12 oz penne rigate * 4 oz cream cheese, cubed * 1/4 c milk * 2 c shredded casserole cheese * 1/4 c crushed croutons ---+++ PREPARATION 1. Heat oven to 425 1. Combine squash, onion, EVOO, and pepper flakes in 13" x 9" pan. 1. Bake 30-40 minutes or until squash is tender. 1. Meanwhile, cook pasta; drain. 1. Add cream cheese and milk to pasta; stir until cheese is melted. 1. Add pasta mixture and 1 c cheese to squash mixture in pan. 1. Mix lightly. 1. Top with remaining cheese and crouton crumbs. 1.
